Im Rahmen eines Interviews spricht Ernährungsexpertin Mag. Ursula Pabst vom Ernährungsintitut Pabst mit die-frau.at über Ernährung, Diäten und ihre Arbeit.

die-frau.com: Haben Sie im Frühjahr mehr Aufträge als im Herbst?

Ursula Pabst: In unserem Ernährungsinstitut werden nicht nur Klienten beim Abnehmen begleitet. Wir betreuen auch Personen mit Nahrungsmittelunverträglichkeiten oder beim Zunehmen. Daher ist unsere Auftragslage nicht stark saisonal schwankend. Wer abnehmen will, sollte sich auch nicht von der Jahreszeit beeinflussen lassen. Denn wer richtig denkt, wird die Bikinifigur ohnehin nicht erst im Juni anvisieren, sondern sollte schon im Herbst damit beginnen, die Grundpfeiler dafür zu stecken.

 

die-frau.com: Können Sie unseren Lesern und Leserinnen Tipps zum Thema „Ernährung“ geben?

Ursula Pabst: Das Thema Ernährung ist so wahnsinnig breit, dass es zigtausende Bücher darüber gibt. Es gibt Ernährungsrichtlinien, die für viele passen mögen, für einige jedoch nicht. Ein erster Schritt kann sein, sich sein eigenes Ernährungsverhalten bewusst zu machen. Wer eine Woche lang ehrlich mitschreibt was er/sie isst und trinkt, erkennt vielleicht selbst schon wo es Verbesserungspotenzial gibt.

 

die-frau.com: In welcher Relation steht Ernährung zu Sport?

Ursula Pabst: Sowohl eine ausgewogene Ernährung als auch ein gewisses Maß an Bewegung gehören zu einem aktiven Lebensstil unbedingt dazu. Wer sich bewegt, spürt seinen Körper häufig anders als inaktive Menschen. Diese Körperwahrnehmung trägt schlussendlich auch dazu bei, seinen Körper verwöhnen zu wollen und ihn nicht zu schädigen. Wir hören oft, dass unsere Klienten gerade nach dem Sport extreme Lust auf etwas Gesundes haben.

 

die-frau.com: Momentan boomt die sogenannte „Eiweiß-Diät“. Man ernährt sich ausschließlich von eiweißreicher Nahrung und streicht alle kohlenhydrathaltigen Lebensmittel von der "Liste". Was halten Sie von dieser Diät und ist das nicht eher gesundheitsschädigend?

Ursula Pabst: Eiweißreiche Lebensmittel tragen dazu bei, dass die Muskelmasse besser erhalten bleibt. Leider sind diese Diäten aber keine alltagstaugliche Form der Ernährung, weshalb sie nur zeitlich begrenzt durchgeführt werden. Auf Dauer könnten durch den hohen Eiweißgehalt auch Schäden an den Nieren auftreten, weswegen wir überhöhte Eiweißmengen nicht empfehlen. Als Einstieg können eiweißbetonte Tage in einer Ernährungsumstellung aber helfen, die Motivation durch den ersten Erfolg zu steigern. Langfristig empfinden wir es aber als essentiell, dass der gesunde Umgang mit den richtigen Kohlenhydraten auch gelernt wird.

 

die-frau.com: Viele Leute haben keine Zeit, um gesundes Essen zuzubereiten, deshalb greifen sie zu Fast-Food-Produkten. Ist es möglich, sich gesund zu ernähren, und das ohne großen Zeitaufwand? Wenn ja, wie?

Ursula Pabst: Viele Fast-Food-Produkte enthalten zu viel Fett, zu viel Zucker und zu wenig Nährstoffe. Doch wer ab und zu selber kocht und damit ein bisschen Routine im Schnippeln und Zubereiten entwickelt, kann in kürzester Zeit schmackhafte Speisen zubereiten. Komplette Salate sind in 10-15 Minuten fertig. Gesunde Brotmahlzeiten können noch schneller fertig sein. Und selbst Nudelgerichte brauchen nicht länger als die Nudeln zum Kochen brauchen. Hier sehen wir überhaupt keine Ausrede. Die Anforderung, dass es schnell gehen muss, hören wir von fast allen unserer Klienten. Und wir kommen ihr mit unseren Rezeptvorschlägen gerne nach. Das ist gar kein Problem!

 

die-frau.com: Sind BIO-Lebensmittel tatsächlich gesünder als andere Lebensmittel? Welche Gründe sprechen für diese Art der Ernährung?

Ursula Pabst: Bio-Lebensmittel sind nachhaltiger, sowohl wirtschaftlich als auch ökologisch. Sie berücksichtigen öfter faire Arbeitsbedingungen und sind damit ethisch vorzuziehen. Neben dem Bio-Aspekt sind aber auch Regionalität und Saisonalität zwei wesentliche Schlagworte. Wer überhaupt mit offenen Augen und geschulten Geschmacksnerven einkauft und konsumiert, wird jeweils für sich selbst die richtige Entscheidung treffen können. Wir betonen allerdings, dass Bio-Produkte allein nicht der Weg zu gesunder Ernährung sein können. Denn auch von Bio kann man zu viel essen und auch von Bio gibt es Süßigkeiten. Einen Freibrief gibt es daher auch hier nicht.

 

die-frau.com: Wie weiß man überhaupt, ob man übergewichtig ist oder nicht? Welche Berechnungsart für das Körpergewicht ist am geeignetsten, und wie lautet die Formel für die Berechnung?

Ursula Pabst: Zur Beurteilung, ob man über- oder untergewichtig ist, wird meist der BMI (Body Mass Index) herangezogen. Er setzt die Körpergröße in m2 dem Gewicht gegenüber (BMI = kg/m2) und Werte zwischen 19 und 25 sind normal. Dennoch berücksichtigt dieser Wert überhaupt nicht die "Körperzusammensetzung", weshalb zum Beispiel sehr muskulöse Männer schnell drüber sind. Wir beachten in unserer Bioimpedanz-Analyse daher mehrere Werte, wie etwa Muskelmasse und Körperfettmasse.
