In Japan gibt es bislang kaum Übergewichtige, und aufgrund der japanischen Küche hat die Bevölkerung eine auffallend hohe Lebenserwartung.

Japaner konsumieren in der Regel täglich 27 unterschiedliche Nahrungsmittel, während die Bevölkerungen westlicher Länder im Schnitt in einer ganzen Woche nur auf 30 unterschiedliche Lebensmittel kommen. Die Vielfalt und Reinheit der Lebensmittel verschafft der japanischen Bevölkerung eine weitaus höhere Lebenserwartung. Sie erkranken seltener an alterstypischen Krankheiten, wie beispielsweise Diabetes, koronare Herzkrankheiten und Krebs.

Die Hauptbestandteile der japanischen Küche sind Reis, Sojaprodukte und Fisch. Die Sojabohne ist reich an Phytoöstrogenen, die das Risiko von Herzerkrankungen maßgeblich reduzieren. Fisch als Hauptnahrungsmittel ist reich an Omega-3-Fettsäuren, daher nehmen Japaner weitaus mehr Omega-3-Fettsäuren zu sich als beispielsweise Amerikaner und Europäer. Diese Fettsäuren haben nachweislich eine positive Auswirkung auf das Herz-Kreislaufsystem, die geistige Gesundheit und den Cholesterinwert des Menschen.

Weiters ist der Grüne Tee in Japan sehr beliebt und auch ihm wird eine lebensverlängernde Wirkung zugeschrieben. Fest steht, dass das Getränk positive, kardiovaskuläre Eigenschaften besitzt, reich an Antioxidantien ist, und somit Krebs vorbeugt.

Auch Gemüse in allen Variationen ist in der japanischen Küche unabkömmlich. Äußerst beliebt sind verschiedene Pilze, Kraut, Kohl, Seetang, Bambus, Auberginen, Gurken und Rüben. Reis gilt in Japan als Grundnahrungsmittel und ist Hauptbestandteil fast jeder Mahlzeit. Japaner sparen bei der Verwendung von Öl und Fett, da sie den Eigengeschmack der Produkte bevorzugen.

Um die japanische Diät zu Hause durchzuführen, muss man kein Sushi-Meister sein. Es reicht schon, zwei- bis dreimal die Woche rotes Fleisch durch Fisch zu ersetzen. Eine Vielfalt an frischem Gemüse trägt zu einem gesünderen und schlankeren Körper bei. Kochen Sie die Lebensmittel nicht zu lange. Idealerweise werden die verwendeten Produkte nur kurz im Wok angebraten und verrührt. Getreide- und Milchprodukte sind in Japan eher eine Seltenheit.
